We love pancakes, especially on Sundays; therefore we made yesterday for late breakfast buttermilk pancakes. I have to say I have never made buttermilk pancakes before, but I decided to try it out, and the result was great!

I just substitute from my original recipe, one cup of milk for one cup of buttermilk, and it actually give a nice twist to my recipe.

Although I personally like my pancakes with shred white cheese and honey, I decide to make them with a mix-berries sauce that is super easy to do. In the case you don’t have a microwave at home you can make it in a pot, just add the frozen berries a bit sugar and close it.



2 cups flour

5 tsp baking powder

4 T sugar

1 tsp salt

2 eggs

1/2 cup of melted butter

1 cup milk

1 cup buttermilk





Preheat a griddle or large skillet over medium heat. Combine dry ingredients in a medium bowl, and whisk with a fork to combine. Mix egg yolks, melted butter, milk and buttermilk together until well combined. Add to dry ingredients, and mix with a fork until mostly combined, mix the egg whites in another bowl, with electric mixer on medium speed until frothy. Add the rest of the mix and mix it with a spoon. Lightly butter the preheated griddle and pour the batter by 1/4 cup scoops onto the griddle. Cook 3-4 minutes or until there are bubbles throughout the top of the pancakes, and the edges of the pancakes look dry. Flip the pancakes and cook for another minute or until lightly browned on the bottom. Serve warm with butter and syrup or with mix berries sauce. Makes 20-24 pancakes.


Mix Berries Sauce

This is super easy sauce; I just put a mix of frozen berries in the microwave for 2 min with bit of sugar and voilà!
