Perfect Summer Salad

Today, I bring you guys a very nice chickpea salad for summer, is easy to make and more important is actually healthy. With summer already here, I do prefer to eat more refreshing salads rather to eat something warm, and to be honest, I cannot get enough from this salad, no just because is easy and quick to make, but more importantly I like the mix of flavors.

This summer I feel it particularly hot, I think even more than last year, and will not get colder, but actually hotter, and a salad is the perfect partner for these hot days ahead of us.

The simplicity of this salad is the proof of eating healthy and refreshing, whole foods not necessarily mean to eat boring, but rather to get creative. Although I didn’t create this salad by myself, my friend Alex made it once, and since then is my weekly routine for weeks.

I love the flavor mix between the sweetness of the figs and the saltiness of the feta cheese, and for a nice twist you can add some mint sleeves. For the figs you can either use dry figs or fresh ones, for me the dried figs are a bit sweeter and I love them, and as my doctor recommends me to eat the rainbow, what a better salad to prepare than this one that is packed with protein, antioxidant, and fresh vitamins.



2 15-ounce cans chickpeas (garbanzo beans), rinsed and drained, or 3 cups cooked chickpeas

1 medium red bell pepper, chopped

1½ cups chopped fresh chives

½ cup chopped red onion

3 tablespoons extra virgin olive oil

1 package of feta cheese chopped

4 figs, chopped • ½ cup chopped tomatoes

½ teaspoon kosher salt and freshly ground black pepper


Mix all the ingredients in a big bowl; add the salt pepper and olive oil and you are ready to go!
