Flammkuchen

Since a long time I have been craving for this special pizza or flammkuchen, you see in back in Caracas after the train of capoeira on Fridays, some friends and I used to come up to el Hatillo, a little town founded in 1784, with baroque style, to have dinner after our training. In this beautiful little town was a little tiny restaurant, where the specialties were all kind of pizza; nevertheless, they had a special pizza that love, that was with fresh cream, bacon, and leeks, however, I thought that since I came to Europe, my only possibility to enjoy this pizza was or to go back to Venezuela or do it by myself.

One day I was watching Austrian television when it happened to be a cooking program about flammkuchen, for my surprise was exactly my special pizza back in Caracas, finally, I decide to make it, and, of course, it brought back a lot of memories, of my capoeira friends, my country, and my special town…But most important I bring you today my recipe!

Austrian Flammkuchen Recipe

Ingredients

  • 4 1/4 cups flour
  • salt
  • 4-5 tbsp vegetable oil
  • fresh cream
  • leek chopped
  • bacon chopped

Directions

  • Combine all the dough ingredients until smooth non-sticky dough forms. This can be done by hand.
  • Wrap dough with plastic foil and let rest in the fridge for 2 hours.
  • Preheat your oven to 250 C.
  • After the dough is ready, put first the fresh cream, the leek cut it in little pieces and the bacon, put it on the oven for 10 min and voilà!
